Apple Chutney Recipe

Ingredients

1.5kg/3lb cooking apples, peeled, cored and diced

1.5kg/3lb onions, skinned and chopped

0.5kg/1lb sultanas or stoned raisons

2 lemons

700g/1 1/2 lb demerera sugar

600ml/1 pint malt vinegar

 

This is a light chutney, fruity but not spiced, which is good with pork and poultry. 

Put the apples, onions and sultanas or raisins in a pan.  Grate the lemon rind, strain the juice and add both to the pan, with the sugar and vinegar.  Bring to the boil, reduce the heat and simmer until the mixture is of a thick consistency, with no excess liquid. Pot and cover. 

Makes about 1.75kg/4lb
